Marble is chef David Higgs’s room built around cooking over flame, and the Cape Town one puts a wood-fired grill imported from Michigan at the centre of it. The menu is South African fare done over fire, with a separate seafood menu and a rooftop bar above. Lunch and dinner run seven days with the kitchen closed for an hour between them.
